Rice flour derives from the grinding of rice. Rice , Oryza sativa, is a cereal native to Asia that is also cultivated in northern Italy. The herbaceous plant is 120 to 195 centimeters high and has a terminal panicle on which the caryopsis will develop, the seeds or grains of rice.

The harvesting operation is that which allows the harvesting of the rice, which is subsequently subjected to various stages of processing: cleaning, husking, bleaching, brushing, polishing, glazing.

Rice flour has a high starch content (over 75%) and a low percentage of proteins (about 7%), lipids, mineral salts (calcium, iron, phosphorus, potassium, sodium and zinc), fibers and vitamins .

The B vitamins are the main ones ( B6, B3, B2, B1 ) followed by vitamin E. The fiber and mineral salts, as well as the vitamins themselves, are significantly reduced with the refinement of paddy rice, which is why whole wheat flour brings more nutrients than the refined one. Rice flour is commonly found in supermarkets and organic food shops.

  • a small glass of milk or rice milk or soy,

Preparation : In a bowl pour the brown rice flour, add the cream of tartar and the sugar, mixing with a fork and adding yogurt and milk, until a smooth and homogeneous mixture is obtained. Add the diced apples to the dough, a pinch of cinnamon and the coarsely ground walnut kernels. Pour into a plum cake mold and place in a preheated oven at 180 °, cooking for about half an hour.
