Pasta is a healthy food, ideal for daily lunch, even healthier if seasoned with seasonal vegetables and enriched with products with another protein value such as tofu.
Once the macaroni are cooked al dente, the bavette are ready, orecchiette to perfection, how can you flavor these different types of pasta with tofu ?

1. Macaroni with tofu, rocket and pine nuts

2. Fresh orecchiette with tofu sauce and mushrooms
Prepare the sauté in a frying pan with extra virgin olive oil and season with a clove of crushed garlic and then remove the celery, carrot, onion, champignon mushrooms all cut into small cubes of the same size, and a little pepper . Fry for about five minutes, adjusting with salt.
Take a stick of natural tofu, crumble it using a fork, add it to the mixture and, after a few minutes, deglaze with white wine. Add the tomato sauce and cook until everything has thickened. This sauce, light and tasty, is perfect for seasoning orecchiette or fresh trophies!
3. Bavette with zucchini, smoked tofu and saffron
This time the tofu, which can also be used here in the smoked variant, should be cut into strips as thin as courgettes, a couple of centimeters each. The green and white strips are then sautéed in a pan with extra virgin olive oil, a clove of crushed garlic, which is then removed, salt.
