The common carrot ( Daucus carota ) is an annual or biennial herbaceous plant that grows throughout Europe. It is also one of the most cultivated vegetables.
Carrot can be considered one of the most valuable vegetables for human nutrition, since its nutritional and therapeutic properties are many.
The main constituents are represented by mineral salts such as iron, phosphorus, calcium, potassium, sodium, magnesium and copper, as well as important vitamins such as C, D, E and those of complex B.
The presence of carbohydrates in the form of two sugars is significant, dextrose and levulose, which have the ability to raise the blood sugar level: for this reason the carrot must be taken in moderation by diabetics.
The carrot is also rich in carotene, also called protovitamine A, which is essential, inter alia, for good vision.
The parts in which the healing properties reside are the root and the seeds. The root attenuates inflammation of the gastric and intestinal mucosa as well as of the skin. It stimulates diuresis, purifies the organism and due to its remarkable mineralizing, vitaminizing and rehydrating capacities, it is recommended in the treatment of intestinal infections that manifest themselves with dysentery. It is also soothing for burns. The seeds, on the other hand, have aperitif and digestive properties. Urinary secretions increase as the root.
Carrot oil, which has a higher concentration of active ingredients, is particularly suitable for refreshing the epidermis, which keeps it elastic and hydrated, protecting it from prolonged exposure to the sun from the risk of sunburn, thus facilitating tanning. In this regard, if you want to speed up your sun tan, it is useful to drink carrot juice every morning or eat raw carrots.
