Chia seeds are nutritious and versatile. At least one teaspoon a day makes your diet rich and healthy, especially if you follow a vegan or vegetarian diet; don't forget to use them in addition to simple recipes: from soups to salads, through bread, meatballs, cakes and biscuits, even to make pudding! Here are some practical suggestions.

Vegan meatballs with chia seeds

Ingredients for about 4 people

> 200 g of tofu approximately;

> 1 boiled potato;

> 1 raw chopped zucchini;

> 1 tablespoon of coriander or chopped fresh parsley;

> 4 tablespoons of breadcrumbs;

> 1 teaspoon of ginger powder;

> 1 tablespoon of chia seeds;

> 1 tablespoon of sesame seeds;

> Extra virgin olive oil, salt, freshly ground black pepper.

Preparation:

Boil the tofu in flavored water (with soy sauce, vegetable nut or vegetables) for a few minutes, then place it in a bowl and crush it with a fork; add the boiled potato passed in the potato masher, the grated raw courgette, half a tablespoon of chia seeds, ginger, the grated bread and the coriander or chopped parsley.

Add salt and pepper to taste and a little oil. Mix everything together and form small round balls with your hands. Pass the meatballs in the chia and sesame seed mix and place them on the oven plate, sprinkled with oil. Cook for about 15 minutes, stirring the meatballs a couple of times. Drain and season hot. They are excellent served with accompanying sauces, such as vegan mayonnaise.

Chia seeds and almond butter biscuits

Ingredients for a dozen cookies:

> 120 g of flour 0;

> 100 g of rice flour;

> 50 g of spelled flour;

> 120 ml of almond milk;

> 2 tablespoons of almond butter;

> 100 grams of whole cane sugar;

> 3 tablespoons of chia seeds;

> 1 vanilla bean;

> 1 teaspoon of cream of tartar;

> 1 pinch of salt.

Preparation

In a bowl add the flour and a pinch of salt. Then add the seeds (leaving aside some), sugar, vanilla, milk, butter and knead well. Allow at least half an hour to rest in the refrigerator. Preheat the oven to 108 °, then take the dough and make balls, crush them lightly and place them on the non-stick coated paper plate. Crush them lightly and cover them with the remaining chia seeds.

Bake for about 10-15 minutes.

Chia seed pudding

Ingredient i:

> 250 ml of cow's milk or soy, rice or almonds;

> 1 pair of spoonfuls of chia seeds.

Preparation

Heat the milk, without bringing it to the boil, add the two tablespoons of chia seeds. Wait about 15 minutes for the mixture to become gelatinous. Mix again with a whisk and put the mixture in the refrigerator to enjoy it cold.

For a more decisive taste, it can be added to the milk of cocoa powder, malt, natural vanilla, crumbled amaretti or cinnamon; it can be garnished with fresh seasonal fruit sliced ​​or with dried fruit, walnuts, almond flakes or honey.
