Citrus fruit biscuits

Ingredients : 300 grams of kamut flour, two tablespoons of citrus fruit honey, three tablespoons of extra virgin olive oil, the grated rind of an untreated orange, the grated rind of an untreated lemon, a pinch of salt, half teaspoon of baking soda, a large whole egg.

Procedure . Put all the ingredients on a pastry board, with the exception of oil, egg and honey. Mix the ingredients with your hands and make it like a volcano, with a crater in the center, where the honey will be put first and then egg and oil. Knead starting from the center, incorporating the other ingredients. The procedure is the same as that used for classic shortcrust pastry. If the dough is hard or you can't get the classic dough ball, add the juice of half an orange.

Once you have a dough ball, let it rest in the fridge for about half an hour, roll it out with a rolling pin and cut the biscuits with the molds. Bake at 180 degrees for about 7/8 minutes.

Sweet pizzas

Ingredients. 300 grams of spelled flour, 200 grams of kamut flour, half a cube of brewer's yeast, a tablespoon of extra virgin olive oil, raisins (optional), wholemeal cane sugar, warm water.

Method. Melt the yeast in half a glass of warm water to which you have added a teaspoon of sugar. Put the two flours on the pastry board, mix them and then add all the other ingredients, with the exception of sugar and raisins. Get a ball of dough and let it rise for three or four hours. Longer leavening times allow us to use less yeast. When the dough has risen, if your children like raisins, add a handful, previously soaked in water, and knead again. Otherwise, form the pizzas directly, which will then have to be "seasoned" with a sprinkling of wholemeal cane sugar and baked in the oven at 180 degrees for about 10 minutes.
