Vegan Christmas dinner: the first
For a vegan Christmas dinner, let's start with the first course. You can amaze your guests with a good lemon cabbage risotto . To prepare it, you need a carrot, a stalk of celery, an onion, a head of garlic, three lemons, four cabbage leaves and of course rice. 400 grams will do.
It is necessary to prepare a vegetable broth based on onion, celery, carrot and garlic and, once ready, keep it well warm at rest. Then take a pot and pour in extra virgin olive oil.
When it becomes very hot, pour in some slices of onion and fry for 2-3 minutes; at this point, pour in the rice and let it brown. With the ladle, add the vegetable stock a little at a time, taking care to put in more only once you have well absorbed what you have previously paid. Halfway through cooking the rice, pour in the juice of three lemons and continue cooking until complete. At this point, all that remains is to decorate your risotto with some lemon zest and serve it in deep plates lined with sturdy cabbage leaves.
Vegan Christmas dinner: the second
Olives and parsley tofu meatballs . This is our second for the vegan Christmas dinner. To prepare them, you need a stick of natural tofu, one or two handfuls of stoned and half-opened green olives, a large sprig of parsley, two cloves of garlic, a pinch of curry and two tablespoons of breadcrumbs.
Using a mixer, blend all the ingredients until you get a grainy dough, after which it should be worked with your hands, forming meatballs, crushing them slightly on top. Put it in the oven, after brushing it with extra virgin olive oil, at 180 degrees, for a few minutes (until they become golden brown). Serve them, sprinkle some lemon juice and accompany them with fresh vegetables.
