Rice milk is among the various vegetable milks the least fatty, which does not contain gluten and is rich in simple sugars, minerals, fibers and a lower quantity of proteins and lipids.
Given the reduced vitamin intake, it is often found on the market already prepared and enriched with vitamin B12, vitamin D or calcium .

Homemade rice milk: the recipe
Even rice milk can be prepared at home; the procedure is very simple, here are the doses.
Ingredients:
> 50 grams of white rice (of any type, Original, Rome, S. Andrea or other, it is sufficient that it is not parboiled)
> one liter of water
Preparation : rinse the rice in running water to remove part of the starch; boil the rice in the water for more than half an hour, so that the beans soften, blend everything with an immersion blender, until everything is well blended.
Filter with a thick mesh strainer and bottle. If you want you can still add a little water to make it more liquid, a pinch of salt and a tablespoon of rice malt or whole brown sugar if you want to flavor or sweeten.
Being free of preservatives, this milk is kept in the fridge for up to four days. In addition to consuming it as it is, it can be used to prepare cooking cream, béchamel, custard, vegan mayonnaise. The overcooked rice should not be thrown away: it is excellent reused for cakes, meatballs or puddings.
Properties of rice
Finally, it should be pointed out that rice is a cereal that has an essential amino acid, lysine, and good quality proteins. As for the lipid component, it contains mainly essential fatty acids.
It has a lot of potassium and little sodium and is therefore a food indicated for those suffering from high blood pressure. Rice is gluten-free and can therefore also be consumed by those suffering from celiac disease.
Warning : since it contains a lot of simple sugars, rice milk could be contraindicated for those who suffer from diabetes or have a reduced tolerance to carbohydrates.
