Feeding children, the January recipes

For the children's diet in January we propose a recipe with cauliflower, a seasonal food little loved by the little ones that, however, we can perhaps make more palatable for their palate thanks to a "smart" recipe; Mr. Verdure's game ; and a homemade cake with simple ingredients, for a healthier snack than industrial ones.

Cauliflower and potato burger

Many children love hamburgers, and this recipe can therefore be a way to introduce cauliflower or even other vegetables into their diet, simply by "turning" them into hamburgers. If they show that they like this recipe, you can also use different vegetables ; for example, an alternative to cauliflower may be broccoli. It is a recipe suitable for the whole family.

Ingredients for 4 people :

> 500 grams of potatoes;

> 250 grams of cauliflower,

> 50 grams of Parmigiano or Grana cheese,

> 100 grams of breadcrumbs,

> 50 grams of flour,

> an egg,

> a pinch of salt, extra virgin olive oil.

Preparation : boil the potatoes. Separately, boil the cauliflower and then drain it very well. Peel the potatoes and mash them well with the cauliflower until they are still hot. Combine the cheese, salt, egg and flour and mix the mixture.

Line a pan with lightly greased greaseproof baking paper. Divide the mixture into four parts, shape the burgers and pass in the breadcrumbs. Bake at 180 degrees for about 15-20 minutes, turning them halfway through cooking.

Mr. Verdure's game

The children, we have stressed many times, live on suggestions and a playful dish can work miracles . We bet that if we present the vegetables like that even the most squeamish child will eat at least one broccoli?

Food is not a game, we all agree, but an inviting and appetizing presentation invites everyone, even adults, and, in the case of children, it is even more important.

This system can be used, of course, also for fruit, varying the types of fruit and vegetables according to the seasonality of the food.

Cocoa muffin, a DIY snack

Kids love snacks and if they smell like chocolate, so much the better. A homemade snack with a few simple ingredients is a healthier alternative to industrial snacks. These cocoa muffins are very soft, delicious and very easy to make.

Ingredients :

> a vanilla yogurt,

> 100 grams of sugar,

> 2 tablespoons of bitter cocoa,

> 3 eggs,

> 200 grams of 00 flour,

> 80 grams of high oleic sunflower oil,

> half sachet of vanilla yeast for cakes.

Preparation : with an electric mixer, whisk the eggs well with the sugar, then add first the yogurt and then, slowly, the cocoa, flour, oil, and finally the yeast, mixing with a wooden scoop and then with the electric mixer.

Put a spoonful of the mixture in each cup and bake at 180 degrees for about 15-18 minutes. Cooking times depend on the size of the muffins. To make the recipe even more delicious, add a few drops of dark chocolate to the mixture.
