The menu of the vegan New Year
On the web, there's a lot of talk. Parties and dinners for vegetarians and vegans . The menus are clear and simple.
A first type of menu offers, among the starters, chickpea hummus with croutons, fennel with tahini sauce, cream of carrots and peanuts. Another menu? Of course! Fried sesame pioppini, pear and cauliflower flan, spicy rice croquettes, artichoke cream, hazelnut and red radicchio rice, beetroot and almond fritter, seitan and pineapple skewers, marzipan truffle, orange and vanilla baklava.

Cooking vegan for the New Year's menu
If you are more traditionalist, you will want sausage with lentils . Vegan version? Of course you can. Here is the recipe.
Ingredients:
400 g of paprika-flavored seitan
80 g of compact tofu
100 g of boiled potato
1 tablespoon of salt (better smoked salt)
nutmeg
1 teaspoon of cinnamon powder
5 ground cloves
1 tablespoon of ground black pepper
1 clove of garlic
2 teaspoons of agar agar powder plus 2 tablespoons of poorly finely chopped agar agar
20 cl of red wine
20 cl of dry marsala
Get the seitan, otherwise if you can prepare it yourself. Here is the recipe. Once ready, place the seitan in the mixer with the potato, wine, marsala, salt, agar agar and ground spices and blend everything as finely as possible. Then put it in a bowl, mix the crumbled tofu coarsely with a fork and mix everything well. Shape the dough to form a sausage, roll it tightly with high temperature resistant food grade film, place it in a pan full of water with the bottom covered with a cloth, to prevent the plastic from coming into contact with the pot, bring to a boil and cook about half an hour.
Once cooked, gently remove it from the pan and let it cool before removing it from the film. Cut it into slices and pass it a few minutes in a pan with the lentils in a white stew or with the sauce. Here is the vegan New Year ready!
