Composition and nutritional properties

The composition in general of a bud is subdivided into 85% of water, from 5% to 35% of proteins, then we find lipids, soluble sugars, vitamins, minerals and other nutritional and healthy substances.

  • The energy content is very high, thanks to the presence of sugars in a simple state and therefore quick to metabolize and use even immediately by the body. Even if they are highly energetic they do not contain complex fats and the caloric intake of 100 grams of shoots is around 45 Kcal.
  • The vegetable proteins of the sprouts allow to insert in our diet the correct percentages of daily proteins necessary without however associating us with fats as happens in the case of foods of animal origin. Moreover, as we have seen, they have few calories and obviously do not contain cholesterol, an excellent combination for a natural and healthy diet.
  • The lipid part is in the form of glycerol and fatty acids which are thus more available than complex and therefore healthier fats.
  • The vitamins present in the sprouts are an exceptional reserve and include all the B vitamins, the retinol (vitamin A), vitamin C (antioxidant and anti-aging) and many others depending on the individual sprout. The exceptionality of the sprouts is precisely the extremely high percentage of vitamins that increase even up to 400% compared to the non-sprouted seed and therefore become an excellent natural supplement.
  • Mineral salts have high percentages in shoots and essentially we find sodium, iron, calcium, potassium and phosphorus. The other minerals are present in different percentages depending on the individual shoots.
  • Many substances present in the sprouts, besides being nutritious, also have other healthy functions (for example, they are anticancer).
  • An important example is certainly chlorophyll : this vegetable substance is very similar to the hemoglobin molecule and in fact it seems to help blood regeneration, the formation of red blood cells and a better oxygenation of the whole body. It also facilitates the absorption of vitamin A and promotes digestion. In the buds the presence of chlorophyll is given by exposure to the sun and therefore it is advised towards the end of the sprouting to leave the containers for at least 8 hours exposed to direct light.
  • The presence of live and viable enzymes already prepared in the shoots makes it possible to integrate these precious elements that the organism usually has to produce autonomously with expenditure of forces and energy; since the shoots are a very rich source of enzymes we can draw from these foods without putting our body under stress and helping it in many metabolic and physiological processes.

There are also many other substances in the buds, substances that protect against some forms of cancer, leukemia or other diseases such as osteoporosis and other ailments. This function of prevention and this wealth of healthy nutrients makes the shoots of functional foods.
