3 recipes with cherries



Strawberries or cherries, this is the dilemma!

Tasty and healthy, cherries compete with strawberries for the primacy of the favorite red fruits of the beautiful season.

Versatile and varied, there are many types of cherries, from the firm and dark Vignola corns, to the red and typical Ferrovia cherries, to the "poor relatives" of cherries, sour cherries, sour cherries, maraschino cherries and even the forgotten cherries from hedge .

Three delicate and inviting recipes, to have fun and experiment:

Risotto with cherries and robiola

Ingredients for 3 people

> 6 punches of coarse grain rice, such as Carnaroli or Arborio;

> 15 ripe cherries (corns or railroad);

> 1/2 glass of red wine;

> 1 shallot;

> vegetable stock to taste;

> salt, pepper, extra virgin olive oil

> 1 teaspoon of fresh robiolina and grated Parmesan cheese to cream.

Preparation

Wash the cherries and remove the nut ; in a casserole, prepare the sauté with a couple of tablespoons of oil, the chopped shallots, the cherries cut in four (keep 5/6 aside to decorate), the rice.

Stir for a couple of minutes to flavor, then add half a glass of red table wine and continue with the boiling vegetable stock.

Cook the rice, taking care to leave it soft; turn off the heat a couple of minutes before, when it is still a little al dente, and add the cheeses, a dash of raw oil, pepper. Serve by decorating with a couple of fresh cherries for each dish.

Cherry sorbet

Ingredients for 3 people

> 600 g of pitted cherries;

> 1/2 lemon organic juice;

> 100 g of raw cane sugar;

> 275 ml of water;

> some fresh mint leaves.

Preparation

In a small saucepan with high sides melt the sugar with the water making it simmer slightly ; blend the cherries with the filtered lemon juice and add to the sugar.

Mix and put in the freezer for at least four hours before bringing it to the table ; be careful to mix the sorbet obtained every hour.

After the indicated time, you can serve in small bowls decorating with fresh mint leaves.

Cherry biscuits

Ingredients for about fifteen biscuits

> 250 g of white flour 0;

> 2 eggs;

> 1 pinch of salt;

> 1/2 glass of light oil (corn or rice);

> 100 g of sugar;

> 1/2 sachet of baking powder;

> 150 g of cherries.

Preparation

Whisk the egg whites with a pinch of salt and, separately, whisk the egg yolks with the sugar; add the oil to the latter and mix well, combining the sifted flour, the cherries deprived of the stone and chopped, the baking powder and finally the eggs until gently sprinkled.

With the help of a spoon, divide the soft dough into fifteen balls the size of a walnut, placing them on a baking sheet lined with baking paper. Bake in preheated oven at 180 ° C for about 10/13 minutes or until golden brown.

Allow to cool before tasting, sprinkling with icing sugar if necessary.
