Lemon sorbet
Lemon sorbet is a classic . It is the sorbet par excellence. Refreshing, refreshing and very easy to prepare. A real must for the summer.
Ingredients for 6 portions:
> 250 g of lemon juice;
> the rind of an untreated lemon;
> 350 g of water;
> 150 g of sugar.
Preparation
Pour the sugar and water into a saucepan. Melt the sugar completely over a very low heat, stirring constantly, for about 5 minutes. Allow the syrup to cool, add the squeezed and filtered lemon juice, add the lemon rind and mix with a whisk or wooden scoop.
Allow the mixture to cool well, placing it in the refrigerator for an hour . Operate the sorbet maker, pour the mixture and let it run for about 30/35 minutes. Pour into glasses and consume at the moment.
You can get decent results even without a sorbet maker . In this case, place the mixture in a bowl and place in the refrigerator for at least six hours, stirring every 30 minutes to obtain the right consistency. More than a sorbet it will be a granita, the taste will however be very pleasant and above all it will be a natural and fresh dessert.
Exotic mango sorbet
Mango sorbet has a very exotic and fresh taste . And, with this recipe, you don't need the sorbet maker!
Ingredients for 4 servings
> 500 g of ripe mango pulp, cut into cubes;
> 100 g of cane sugar;
> the juice of half a lime;
> 200 g of ice, in pieces not too large;
> natural cold water.
Preparation
Put the mango cubes in the freezer the night before . At the time of preparation, remove the fruit from the freezer and let it sit for a few minutes at room temperature.
Meanwhile, pulverize the brown sugar in a powerful blender or mixer . Add the fruit, lime juice, ice and 50 grams of water. Turn on the blender and let it run for about 5 minutes. If you want a creamier consistency or if the blender is struggling and under stress, add more cold water to taste. Serve the mango sorbet immediately.
An alternative idea is to prepare a sorbet, with the same procedure, combining mango with peaches; in this case use 250 g of mango pulp and 250 g of peach pulp, freezing the fruit in two separate bags .
Blueberry sorbet
Ingredients for 4 servings:
> 600 g of blueberries;
> the juice of a lemon;
> 100 g of sugar;
> 300 ml of water.
Preparation
Wash the blueberries and pour over the filtered lemon juice. Prepare a syrup by dissolving the sugar in the water over a very slow heat for about 5 minutes. Blend the blueberries, add them to the syrup and cook, over a very slow heat, for a couple of minutes, stirring constantly.
Allow the mixture to cool first at room temperature and then in the refrigerator . When it is very cold, turn on the sorbet maker and let it run for about 30/35 minutes before serving.
