The quince is the perfect ingredient for jams, but not only. You can use it to get original dishes with an autumn flavor. Or you can use the quince jelly for unusual and rich combinations.

Risotto with quince and cheese
Risotto with quince and cheese is a perfect dish to surprise your guests.
Ingredients for 4 people :
> 320 g of rice for risotto;
> a medium quince;
> 1 l of vegetable broth;
> 30 g of gorgonzola;
> 20 g of mascarpone;
> 1 tablespoon of extra virgin olive oil;
> black pepper.
Preparation
Prepare the vegetable broth. Cook the quince in a couple of tablespoons of water and blend it. Toast the rice in a pan with a tablespoon of extra virgin olive oil and cook it with the vegetable stock. When the rice is al dente, add the quince puree and stir in the gorgonzola and mascarpone. Finish with a sprinkling of black pepper.
Pie with quince, ricotta and chocolate
This is a very autumnal cake, very soft and perfect for the whole family's breakfast.
Ingredients
> A medium quince, the net flesh should be about 100 g;
> a yellow apple (to garnish);
> 300 g of flour;
> 120 g of sugar;
> 200 g of cow's milk ricotta;
> 3 eggs;
> a pinch of salt;
> half a teaspoon of cinnamon;
> 3 tablespoons of high oleic sunflower oil;
> 50 grams of dark chocolate;
> A sachet of vanilla yeast for cakes.
Preparation
Cook the quince pulp in a couple of tablespoons of water; on low heat and with lid . Blend and let cool. Coarsely chop the chocolate.
Work the eggs with the sugar, then add the ricotta and the quince puree, the oil and finally the flour to which you will have added a pinch of salt and cinnamon. Work the mixture well.
Add the chopped chocolate, mixing well with a wooden scoop and finally the yeast. Pour into a previously floured and buttered mold and garnish the surface of the cake with thin slices of yellow apple . Bake in a static oven at 175 degrees for 40 minutes.
Toast with cheese, cotognata and hazelnuts
This is an idea for an original snack, or even to amaze friends with a different aperitif idea.

> 4 slices of cereal bread;
> 4 slices of primosale cheese;
> 4 slices of quince jelly;
> toasted hazelnuts.

Parmesan salad with quince jelly
The quince jelly also lends itself to the preparation of tasty salads .
Ingredients for 4 people
> a head of curly salad;
> 120 g of diced or flake Parmesan;
> 80 g of diced quince jelly;
> a tablespoon of olive oil;
> a teaspoon of balsamic vinegar;
> salt.
Preparation
Also in this case the preparation is very simple . Simply wash the salad, dry it well and combine all the ingredients.
Quince jam and chestnuts
When it comes to recipes with quince, you can't miss a jam . Quince and chestnut jam is very tasty and full of energy, to be consumed for breakfast or to combine with cheeses.
Ingredients
> 200 g of quince (net weight);
> 200 g of chestnuts (net weight of chestnuts already peeled and boiled);
> 100 g of yellow apples (net weight);
> 400 g of sugar;
> 30 g of lemon juice.
Preparation
Boil the chestnuts and peel them. Peel and dice the apples and quinces. Put the fruit, sugar and lemon juice in a saucepan.
Bring to a boil and cook the jam, over low heat and stirring, until the desired consistency is obtained. Pour immediately into previously boiled glass jars ; invert for ten minutes and keep away from heat and light for up to 12 months.
