Vietnamese cuisine: 2 typical recipes



Vietnamese cuisine, the lightest among Asian cuisines, offers some healthy and must-try recipes.

It is a poor cuisine but perhaps, for this very reason, drawing inspiration from the recipes of Vietnamese cuisine can help us reflect on natural nutrition and the possibility of eating well, safeguarding health.

1. Recipes from Vietnam: Vietnamese chicken salad

The first of the two recipes from Vietnamese cuisine that we offer is a salad ; the main reason we chose it is the absence of fatty seasonings.

The flavor is given exclusively by the richness of the vegetables and by a simple sauce made with water, lemon juice and sugar.

It is therefore a recipe also suitable for those suffering from high cholesterol or high blood pressure and to all those who love to eat in a healthy manner.

Ingredients for 4 people

> 450 grams of chicken breast

> 100 grams of lettuce

> an onion> a carrot> a cucumber

> a coast of celery

> a radish

> a red pepper

> a tablespoon of mint

    For the sauce

    > 5 tablespoons of lemon juice

    > 2 tablespoons of sugar

    > 100 ml of water

      Preparation: cut into cubes and cook the chicken breast, preferably steamed or boiled. Prepare the sauce by dissolving the sugar in 100 ml of water and then adding the lemon.

      Put in a salad bowl the onion cut into rings, the carrot cut into julienne strips, the chili pepper and the radish cut into small pieces; add the previously prepared sauce to these vegetables and keep in the fridge for about an hour. Then add the chicken, lettuce, cucumber and mint. At this point the salad is ready to be served.

      2. Recipes from Vietnam: rice with Chinese cabbage

      The second of the two recipes from Vietnamese cuisine that we offer is rice with Chinese cabbage . This has also been chosen because it is a very simple and healthy recipe, but also for the use of a vegetable rarely used in Mediterranean cuisine, very rich in nutrients and with very low caloric value.

      Chinese cabbage is found in large supermarkets. Alternatively, you can take inspiration from this recipe and use other types of vegetables more common in Italy: broccoli and cabbage, for example, but also spinach or any other vegetable or vegetable that your imagination will suggest.

      The important thing is to learn from the kitchens of the world how to enrich one's diet and make it increasingly healthy and varied.

      Ingredients for 4 people

        > 400 grams of round-grain rice

        > 400 grams of Chinese cabbage

        > a tablespoon of oil (you can use olive oil or another vegetable oil)

        > water

        > salt

        Preparation : boil the rice in about 700 ml of water; the rice should not be drained and left to rest in the pot so it is important that the amount of water is neither excessive nor too little.

        Heat the oil in a saucepan and add the cabbage, previously washed and cut into fairly small pieces; cook it for a few minutes; finally add salt. Put the rice in a serving dish and add the cabbage to the surface of the rice.
