The vegan chocolate cake

It is an easy to make and very tasty vegan cake. The trick is the use of vinegar and baking soda which, making a reaction between them, form a froth that serves to levitate and make the cake very light, which will leave even those who are not vegan surprised!

Here's how to prepare an excellent vegan cake.

Ingredients:

> 1 cup and a quarter of 00 flour

> 1 cup of sugar

> 1/3 cup of cocoa powder

> 1 teaspoon of baking soda

> a pinch of salt

> 1 cup of hot water

> vanilla extract

> 1/3 cup of seed oil

> 1 teaspoon of apple vinegar

> Chocolate glaze:

> half a cup of sugar

> 4 tablespoons of margarine

> 2 tablespoons of soya milk

> 2 tablespoons of cocoa powder

> 2 tablespoons of vanilla extract

    Preparation : preheat the oven to 180 °. In a bowl mix together the flour, sugar, cocoa, baking soda, soya, and salt until the mixture is well blended. Add water, vanilla, oil, vinegar, and mix again, so as to obtain a fluid, lump-free mixture. Put the vegan cake in the oven and cook for about 20 minutes.

    To make the icing, put the sugar, margarine, milk and cocoa in a small non-stick pan and bring to the boil, stirring constantly. Then reduce the heat to a minimum, leaving it to cook for another two minutes.

    Turn off the heat and continue stirring for five minutes. Add the vanilla, mix and pour immediately on the vegan cake: the icing hardens quickly. At this moment, decorate to taste with almonds, hazelnuts or colored sugar balls or tails! Leave an hour to rest before serving.
