Raw food guarantees a supply of vitamins and minerals not altered by cooking processes, stimulates digestion, satiates, detoxifies and moisturizes the body.
Raw food in desserts
The intake of raw food as a dietary treatment was developed in Switzerland by the physician Maximilian Bircher-Benner, the same as having invented muesli.
After recovering from jaundice thanks to a diet of raw apples, the doctor conducted experiments on the effects of a diet based on raw vegetables on health and in 1987 he founded a health center that is still active today.
More recently, raw food has become widespread, becoming almost a food trend especially in the United States. Also known as raw food or "natural hygienism", it is a lifestyle that promotes a healthy and natural diet all raw, organic and as local as possible, excluding the use of cooking (the dryer or the sun) and often also taking medicines, other than food. For raw food, however, we don't mean only vegetables, first courses or second courses: even sweets can be raw!
Raw, not sad!
We tend to think that eating raw, like eating vegan or vegetarian is a sacrifice. Whoever thinks about it does not take into account the path that people are taking, who embrace new food choices for one reason or another. A path which is certainly not always simple, but which in most cases is a choice that brings with it joy and great awareness.
So to dispel the fact that a type of cuisine that involves changes compared to the canonical one is necessarily a sad kitchen! On the contrary, you can discover and experiment new things, play with food, have fun and explore new worlds, even with the palate, even in desserts!

Stuffed raw biscuits
Ingredients for about 20 cookies:
> 1 cup of walnuts, or about 125 grams
> 1 cup and a half of dried dates (200 grams)
> half a teaspoon of pure vanilla extract
> a pinch of salt
> 3 tablespoons of coconut flour
For the filling:
> coconut butter
> natural sweetener, such as agave syrup or honey or whole cane sugar, if you prefer to sweeten the coconut cream to fill.
Procedure: put together the first five ingredients indicated for the biscuits in a mixer, turn and blend until the dates are well chopped. Transfer the dough into an airtight container, seal, forming a compact ball.
Leave to rest for a few minutes, then spread it on a non-stick paper with the help of a rolling pin, cut with a pastry wheel or with a mold in circular shapes.
Put the biscuits so obtained for a few minutes in the fridge or freezer, so as to become firmer. Once hardened, sprinkle the filling on one half and cover with the other biscuit. They are best preserved in the frog, since coconut butter tends to melt at high temperatures.

Raw almond and chocolate biscuits (without filling)
Ingredients for about 20 biscuits:
> 2 cups of almonds (about 250 grams)
> a tablespoon of cocoa powder
> 3 tablespoons of coconut flour
> half a teaspoon of pure vanilla extract
> a pinch of salt
> 125 grams of agave juice
Preparation: Blend almonds with cocoa, coconut flour, vanilla, salt and agave juice with the mixer . Once you reach a good consistency, form with your hands many balls of dough that you will flatten between your hands like a biscuit. Prepare the dryer and store the biscuits for 30 minutes, turning occasionally.
