5 Indonesian vegan recipes



Tasty and flavourful, astounding as required, Indonesian cuisine offers dishes with a unique flavor and light and quick cooking.

Here are 5 quick Indonesian vegan recipes, two first courses, a soup, a very versatile peanut sauce and a mix of vegetables.

To find the ingredients - Indonesian basil, sambal sauce, coconut milk, soy sauce, white cabbage - all you have to do is browse the shelves of the ethnic shops in your city or the well-stocked supermarket departments.

Nasi Goreng, steamed rice with vegetables

Ingredients for 4 people:

> a couple of basmati rice dishes previously boiled,

> a bowl of bean sprouts,

> 2 chopped shallots,

> a chopped red pepper,

> half a cup of tomato pulp,

> a bowl of boiled jackdaws,

> a pepper,

> a leek cut into very thin slices,

> fresh ginger,

> a teaspoon of sambal sauce,

> seed oil,

> pepper

Preparation : put the sambal sauce and grated ginger in the tomato, cut the snow peas into thin strips, the onion and shallot into thin slices, then sauté together with the peppers, the leek and the sprouts in a tablespoon of seed oil, add then the rice and blast it all. Serve hot with fresh chopped string, if you like.

Bami Goreng, noodles with vegetables

Ingredients for 4 people:

> 350 grams of wheat noodles,

> 100 grams of tofu cut into thin slices,

> Chinese white cabbage,

> a couple of carrots,

> a pair of zucchini,

> 2 spring onions,

> a garlic clove,

> a minced spicy red pepper,

> soy sauce,

> daun kemangi (a lemon-flavored Indonesian basil that can be replaced with lemon grass or normal basil)

> seed oil

Preparation : chop the garlic, adding the chilli, minced onions, cabbage, carrots and courgettes into thin strips in a pan with a little oil and sauté for about 10 minutes.

Bring the water to a boil, add a little salt and cook the noodles, drain and sauté in the pan with the vegetables for a few minutes, adding the basil and the soy sauce to flavor.

Gado Gado sauce

Ingredients :

> 120 grams of peanut butter,

> a small garlic clove,

> 2 files,

> a tablespoon of soy sauce and one of extra virgin olive oil,

> a tablespoon of whole cane sugar,

> a fresh spicy pepper,

> a spoonful of tamarind syrup,

> salt and pepper

Preparation : put everything in the blender with only the lime juice, adding a couple of tablespoons of water. Operate for a few minutes and use this sauce to season vegetables, tofu or to accompany white rice and vegetable based first courses.

Sauteed vegetables in Indonesian

Ingredients :

> a Chinese white cabbage,

> a couple of carrots,

> a leek,

> an onion,

> bean sprouts,

> chilli,

> soy sauce,

> extra virgin olive oil or seeds

Preparation : cut the white cabbage into thin strips, carrots, onions and the finest strips of leek as possible. With the wok pan or another non-stick pan, sauté the chilli pepper on high heat and add the rest of the vegetables. Sauté for five minutes and, only at the end, add the bean sprouts and the soy sauce.

Sayur Lodeh curry soup

Ingredients :

> coconut milk,

> a couple of onions,

> a handful of green beans,

> a breast of garlic,

> salt,

> shallots,

> cane sugar,

> galanga,

> fresh ginger,

> limoncina grass,

> curcuma and curry,

> coriander seeds,

> cumin

Preparation : in a non-stick pan, sauté all the vegetables cut into thin strips, adding half a teaspoon of curcuma and half curry, four or five coriander and cumin seeds, freshly grated ginger and lemon grass.

Chopped and the crushed garlic breast that you will then remove. Meanwhile mix the coconut milk with 300 ml of warm water and pour it all into the pan, continuing to cook and boiling for about ten minutes. Serve accompanying with boiled white rice.
