Apple and yogurt plumcake
Ideal for breakfast, the plumcake is in itself a light and versatile dessert. This is the version without eggs and with apples, but it can also be made in various flavors, using coconut yoghurt and half coconut flour, almonds and cocoa, nuts and pears, just to give some ideas of greedy variation.
Ingredients :
> 2 jars of plain yogurt,
> a jar of whole cane sugar,
> a couple of tablespoons of honey,
> 3 jars of type 0 or type 1 flour,
> a pinch of salt,
> the peel of a grated lemon,
> almost half a jar of sunflower oil,
> an apple cut into cubes,
> a sachet of baking powder,
> a sachet of vanillin
Preparation : put the yogurt and sugar in a bowl and mix them together with the other gradually added ingredients. Finally, incorporate the sifted yeast. Pour everything into a plumcake pan and bake in pre-heated oven at 165 ° C for about 30 minutes.
Crepes without eggs of buckwheat flour
If you love crêpes but you can't eat eggs, here's a really delicious and tasty recipe based on buckwheat flour.
The crêpes prepared in this way are tasty and good both sweet and savory stuffed, sprinkled with honey, hazelnut or cocoa cream, homemade jams or natural jams.
Ingredients for a couple of people:
> a couple of cups filled with buckwheat flour,
> almond milk as required
Preparation : put the flour in a bowl and slowly pour in the almond milk; it must be a smooth and homogeneous compound, dense and not too liquid, like a batter. Let it rest for about twenty minutes in the fridge.
Cook the pancakes one by one, two minutes per side, pouring a small ladle of mixture into a boiling non-stick pan.
Tricks of the trade for anti-cholesterol sweets
Instead of eggs you can also use a binder obtained from flaxseed gel, soaked in water overnight; or you can mash a boiled potato ; or still use chia seeds, as these also produce a kind of natural vegetable gel.
The butter can be substituted very well with oil; if you think that the extra virgin olive oil is too strong or heavy, you can replace it with sunflower seed oil or rice oil . To make the recipes even more friable, for example shortcrust or brisè, you can use half rice flour .
