April 7th is World Health Day and this year's theme is " food security ".
2015 will also be the year in which the WHO (World Health Organization) will publish, for the first time, the estimates on the global incidence of Food Borne Diseases (foodborne illnesses ).
In terms of food safety, we recommend watching the video (you can find it at the bottom of the article) WHO: Five keys to safer food, which was designed for an explanation that is as simple as it is creative and animated on what are the "microorganisms" to consider in feeding theme.
The microorganisms in this video are in some cases good (the lactic ferments of yoghurt and the like are presented, we continue to repeat that it is better to limit the use of dairy products and products of animal origin), in other cases those related to putrefaction are presented of food; in farmed meat and fish, therefore, we find fearful creatures that are unleashed but not seen with the naked eye and do not alter the appearance of the food. They are pathogenic microorganisms .
The video describes very well how these microorganisms are responsible for pains such as digestive disorders, nausea, diarrhea, fever, and practical suggestions are given in the form of keys to approach food safety. Let's see them together.
Analysis of the 5 food safety keys of WHO
Easy rules, well presented, to protect yourself and your family, which we feel we want to analyze together with you.
- Maintain order and cleanliness in the eating environment and take personal hygiene into consideration.
- Avoid cross-contamination by separating cooked, leavened or processed food from other types of food.
- Complete the cooking well to kill macroorganisms. On this point we feel however to reiterate that over-cooking kills, in addition to microorganisms, also vitamins and nutrients of the food. There is no need to go towards extreme raw food but it is good to remember that cooking always weakens our entire system. In the example video, there is an egg that is cooked on a pan. Also in this case, we remind that it is better to limit the consumption of animal proteins, especially the eggs, which should be consumed maintaining days apart between one time and another, if not even more than once a week.
- Cook the food at adequate temperatures .
- Always try to understand where the catch comes from, from which seas and from what kind of waters, how clean.

Health and food safety
About 200 types of different disorders are caused by food distributed outside the respect of the basic food safety conditions and containing bacteria, parasites, viruses, chemical substances of various types.
Every year, deaths due to food contamination are around 2 million people. The slogan of this day is "From farm to plate, make food safe", which sounds more or less like "From the farm to the plate, the food arrives safely".
The WHO has also made available a quiz to test its knowledge on food safety issues.
The website of the Ministry of Health provides a page dedicated to the topic of food safety, where it is possible to find news, search for consumer food safety warnings through a research that takes place either by product or substance highlighted or by year .
There are also information on fields and official controls, food export, chemical safety, monitoring flow, food chain risk assessments, GMOs, audits on regional veterinary and food systems, brochures and specific posters and the documentation of the thematic area.
