Valentine's day vegetarian dinner

Girlfriends and boyfriends, newlyweds or centenary couple, happy or quarrelsome lovers, because on this full moon Friday, February 14th, don't take a break and dedicate a romantic dinner as it should be?

Light the candles, wear your favorite sexy dress, create a sweet soundtrack, perhaps going from jazz to Exciter's Depeche Mode, to end with the warm voice of Portishead.

Music aside, here we offer you some advice on how to prepare something aphrodisiac, vegetarian and delicious together for this magical and special evening! Who says in fact that only the shrimp and the chili pepper increase the desire?

In these recipes we will also end up with asparagus, chocolate, ginger, avocado and almonds !

An idea for a Valentine's Day eco-gift?

Entrée: carrot pie with asparagus cream

It starts with something delicate, carrots and asparagus, an unusual but winning encounter, which combines the delicacy of the former with the characteristic taste of asparagus, the perfect formula to tickle the palate. Then fill about four molds (ideally they would be heart-shaped for the occasion, adjusting between quantity and size) anointed with a little oil and sprinkled with breadcrumbs, fill them at just over half with the mixture, then place them in a large baking tray half-filled with water and cook in a preheated oven at 170 ° for about 20 minutes. Let it cool and turn the puddings on a plate.

Ingredients for the sauce:

> 5 asparagus,

> a shallot,

> salt and pepper,

> vegetable broth,

> extra virgin olive oil.

Preparation of the sauce: boil the well cleaned asparagus from the hard parts, drain them. Meanwhile, prepare the sauce by lightly frying the shredded shallot in a little oil, taking care to keep two tips aside to decorate the dishes; then add the rest of the asparagus, salt and pepper and cook. Sprinkle with a little vegetable stock and cook for another 7 minutes, until the cooking liquid is dry. Blend with the immersion blender adding extra virgin olive oil until the sauce thickens and blends.

Serve in a shallow dish, a base of sauce, the inverted flan and the asparagus tips as decoration.

First course: risotto with almonds, ginger and orange

Here we have arrived at the strong, curious and fragrant dish. If for the appetizer it was thought to men, it will be the case to think of the joy of women with the first course.

> salt and pepper.

Preparation : in a pan fry the chopped shallot with two pinches of powdered ginger in a tablespoon of oil over low heat. Then gently fry the rice and add the white wine. Begin to add, little by little, the boiling vegetable broth and, after about 12 minutes of cooking, checking the absorption, add salt and pepper.

In the last five minutes add the finely chopped peel, the juice of two oranges and a few almond flakes, continue until the time allowed for the rice to cook. When the rice is ready, stir in the butter or oil and the Parmesan, keeping it "in the wave", that is soft. Garnish with the razor almonds and serve immediately.

Soft avocado and chocolate dessert

Here we are at dessert. Deliberately, to avoid overloading the Valentine's Day dinner, we go directly to the dessert, skipping the second, so that we can taste it at best. Surprise, here is something exotic, avocado.

Loved already in the times of Louis XV in France, he will not make his appearance here in the usual green version, as he is used to seeing in guacamole, but he will wear warm cocoa notes, melting harmoniously, accompanied by delicate pink salt and coconut .

Ingredients for two people:

> a ripe avocado,

> a generous spoonful of coconut milk,

> 50 grams of melted dark chocolate,
