3 Thai vegan recipes



A fresh salad to which we have removed the prawns, a delicate fruity rice, a popular street dish that instead of meat and egg is served with tofu.

Put Thailand at dinner one evening, with a desire for ethnicity and a touch of originality to welcome and honor even the vegan diners.

Som tam thai, revisited papaya salad

Ingredients for 4 people :

> 300 grams of papaya (the original recipe calls for the use of unripe papaya, still green, but can also be done with a normal papaya),

> 50 grams of green beans,

> 5 cherry tomatoes,

> a carrot,

> 2 tablespoons of peanuts,

> the juice of a lime,

> a spicy green pepper,

> a tablespoon of whole cane sugar,

> a few leaves of Thai basil (or normal if you can't find it),

> half a clove of garlic,

> 5/6 asparagus tips,

> half broccoli,

> half white cabbage,

> iceberg type salad,

> extra virgin olive oil.

Preparation : blend the peanuts, chilli, garlic and a tablespoon of oil together, so as to obtain a coarse cream; add salt and pepper to taste.

Toast the beans, the asparagus, the broccoli in the pan; let everything cool, then cut into thin strips, put them in a large bowl and add the cream.

Also cut the cabbage, carrot, salad, basil and papaya into thin strips and add it to the vegetables. Combine the emulsion of lime juice, sugar and three tablespoons of extra virgin olive oil. Mix everything and serve.

Khao Spad Sapparod, pineapple sautéed rice

Ingredients for 4 people :

> 300 grams of Jasmine rice,

> 2 pineapples,

> a couple of onions,

> fresh ginger,

> a clove of garlic,

> a pinch of whole cane sugar,

> seed oil,

> fresh coriander,

> spicy green pepper.

Preparation : divide the pineapple into two parts and empty the inside, cutting it into cubes.

Boil the rice in lightly salted water; heat the oil in the wok, adding the chopped garlic and a small piece of fresh ginger, the onion and the chili pepper cut very finely; Sauté in the wok, then add the pineapple and the well drained rice.

Cook again for about 3 minutes, serve the rice in the pineapple wrapper, sprinkled with finely chopped fresh coriander.

Pad Si-Yu, stir-fried rice noodles

Ingredients :

> a pack of sen yai (large rice noodles),

> a couple of tablespoons of seed oil,

> a garlic clove,

> 100 grams of natural tofu,

> a small broccoli,

> a couple of tablespoons of soy sauce,

> a teaspoon of sugar,

> white pepper powder or fresh pepper.

Preparation : boil the spaghetti as indicated in the package. In the large wok or frying pan, fry the chopped garlic, add the tofu, then the broccoli cut into small pieces and finally the spaghetti, sauté well, adding soy sauce and warm water if necessary.

Now add the white pepper or fresh chilli and sugar. Serve hot.
