Mexican cuisine: basic foods and dishes

Estados Unidos Mexicanos, better known as Mexico, home of one of the most popular cuisines in the world .

Taking a look at Mexico we immediately understand that it is one of those few kitchens that, instead of having undergone numerous influences, influenced the others, especially with its ingredients that, after the discovery of the New World, reached Europe, the Asia and Africa: tomatoes, potatoes and corn, but also chili, beans, avocado, sweet potatoes, cocoa, pineapple and other foods.

Heart of the Aztec empire, Mexico is today one of the largest and most populous nations, rich in metropolis overflowing all aspects of human life.

The arrival of the Spaniards sanctioned a powerful transformation of Mexican culture and a mixture of races and traditions that developed until today through a war of independence.

It is a subtropical country close to the tropic of cancer, rich at the same time in high peaks, volcanoes, deserts, florid coasts and dense forests.

It is one of the countries with the highest biodiversity and the censuses reveal that alongside a majority of Latin origin there are groups of natives, Afromessicans and Mexicans of Asian and Middle Asian origin. Each of these groups contributed to Mexican cuisine.

Mexican cuisine: typical dishes

Millennia of history held on Mexican territory have refined the local cuisine thanks to the contribution of various ingredients, various techniques, and various cultural tastes and backgronds.

Endemic vegetables and meats are mixed with imported vegetables from Europeans and Africans, while fruit is generally the tropical one of the place, plus citrus fruits of Asian origin.

Corn is one of the kings of the Mexican table, present in tortillas but not only.

Another essential element is the chili pepper, native to the place and much loved and used. Originally the only meat consumed was turkey and game, but Europeans increased their consumption of meat by importing sheep, goats and pigs.

We begin to tell the typical dishes starting from the most typical of street food: the taco, a tortilla to roll up around its filling that can be meat, fish, vegetables or cheese, seasoned with various sauces, avocado, guacamole and spicy.

Quesadilla is very similar, made also with other flours and always filled with cheese.

Also popular is the pambazo, a bread made of flour, lard and egg, cooked with spicy sauces inside.

Do we want to talk about the size? These are ubiquitous spicy sauces that accompany the dishes, there are numerous versions: pepper, tomato, green, white, pepper, vinegar, cocoa.

Rice is also widely used, along with bean and corn salads. Even the mojo, a sauce based on olive oil and spices is used, especially on the inevitable black beans.

Where to eat in Mexico (on the street or in restaurants)

Street food is certainly the most popular in Mexico, the Mexicans use it every day and represent a large part of the food consumed in Mexico. Home food is undoubtedly of better quality and incorporates more elaborate recipes, especially all meat dishes. Restaurants are a decent medium.

Not to be missed in Mexico

Try all the sizes you can try, with both rice and tortillas. The local fruit is really special and represents a good alternative to the feast of greasy and fatty foods, a trap in which tourists often fall around Mexico.

What to avoid in Mexico

As mentioned above, avoid indigestion of extremely oily and fatty foods . Avoid overdoing fried (and refracted!) Foods. Eye to the quality of meat and fish. If you're not used to it, take a break from spicy to your stomach once in a while.

Tips and trivia for a trip to Mexico

As for Indian and Chinese cuisines, the Mexican one is made by many different regional cuisines that can justify a long journey in this magnificent country . Food, especially that of the street and the markets, will also be an opportunity to fill up a true Mexican life and to get to know people better.
