Many often grow in the garden, but we do not always know how to manage them, or how to cook and prepare them.
We are talking about cucumbers, versatile and water-rich vegetables, excellent for making detoxified and moisturizing centrifuges, many love them; but if for other people they can be a bit indigestible, you can try with the old grandma's trick, to cut off the hood of one of the two tops and rub it on the remaining part for a few seconds, letting out the whitish liquid.

Classic Greek tzatziki
Ingredients for two / three people :> a jar of whole Greek yogurt (or fat-free if you prefer to be even lighter, anyway it's so good!), > A finely grated medium-sized cucumber, > 4 or 5 cloves of garlic finely chopped finely, > the juice of half a lemon, > extra virgin olive oil, > whole sea salt.
Procedure : grate the cucumber in a bowl, then add the Greek yogurt and finely chopped garlic; then add a couple of tablespoons of oil, the lemon and the salt emulsified together. Mix everything well and let it cook for a few hours in the fridge before serving decorated with fresh mint leaves.

Sailboats of cucumber, goat and cherry tomatoes
Ingredients for two people:
> 2 medium-sized cucumbers,
> 1 pack of soft spread goat cheese,
> 5 or 6 cherry tomatoes,
> freshly ground black pepper,
> chives,
> extra virgin olive oil
Procedure : clean and peel the cucumbers and cut them into round slices about one centimeter in height; then put the goat cheese in a sac-à-poche and place them on each slice of cucumber. Cut the Pachino into slices, each slice, similar to the sail of a boat, will be inserted into the cheese. Sprinkle with freshly ground black pepper, a layer of extra virgin olive oil and fresh chives.
Carrot, cucumber and apple salad
Ingredients for 3 people :
> a couple of cucumbers,
> 3/4 carrots,
> a pair of golden type apples,
> fresh mint
> extra virgin olive oil,
> apple vinegar,
> sesame seeds,
> salt and pepper
Procedure : clean and peel apples, cucumbers and carrots well. Cut them all into very thin strips, more or less the same size. Pour into a large bowl and season with a vinaigrette composed of extra virgin olive oil, apple vinegar, salt, pepper, mint and some sesame seeds.
