Ingredients for 2 people :

> 4 zucchini

> a stick of tofu

> half a garlic clove

> breadcrumbs

> salt, pepper and a few leaves of mint and basil.

> 2/3 carrots

Preparation : blanch the courgettes for a few minutes, divide them into two parts and empty them. With an immersion blender grind together tofu (previously boiled for a few minutes), the pulp of the courgettes, the garlic, the breadcrumbs, the salt, the pepper and the mint and basil leaves.

Fill the zucchini, bake at 180 ° C for a quarter of an hour / twenty minutes, sprinkling with extra virgin olive oil and sprinkling with sesame seeds. Serve hot on a bed of carrots cut into julienne strips and season with salt, oil and lemon.

Carrot soup with cumin, sautéed courgettes and tofu

Ingredients for 2 people:

> 4 carrots

> caraway seeds

> vegetable nut

> tofu

> 2/3 zucchini

Preparation : boil the carrots, mix in the mixer, add the cumin seeds and the vegetable stock cube, continuing to cook for about 10 minutes, adding a few cubes of tofu. It must be a velvety not too thick.

Separately sauté the courgettes, cut into very thin slices, in a little oil, salt and pepper. Add the courgettes to the surface of the soup when serving with a drizzle of raw oil and some croutons.

Grilled tofu with marinated zucchini and carrots

Ingredients for 2 people:

> tofu

> flax seeds

> pumpkin seeds

> pepper

> soy sauce

> carrots

Preparation : heat the grill plate well, put a little oil in it and place the tofu cut into thin slices. Then add some flaxseed and pumpkin, pepper and soy sauce.

Cook everything for a few more minutes, before placing the slices on the plates you have marinated the zucchini and carrots very thinly cut with the potato peeler and seasoned with oil, pepper, salt and lemon.
