Osteoporosis: influence of diet on bone metabolism



The daily intake of calcium is very scarce in poor nations, and the intake of proteins with diet, in particular those of animals, is also very scarce. Here, and here the problem is reversed: no more a deficiency disease (of Calcium), but a disease of well-being, an Excess disease: an excess of Protein. And animal foods rich in calcium, as you well know by now synonymous with milk and derivatives, are also rich in animal proteins.

But what is the connection between high consumption of proteins and osteoporosis? The answer lies in biochemistry . The animal proteins, being rich in sulphured amino acids, when they are degraded they produce acid waste (sulfuric acid), the most acidic that the organism is able to generate, and that it must eliminate as soon as possible. The intake of a food rich in calcium, but also rich in animal protein, will cause such a production of acid waste that all the calcium that this food contains must be used as buffer. Often this amount of calcium is not enough, and the body must add "its". The result is that the Bone, day after day, yields more Calcium than the Diet cannot provide it, inevitably going towards a reduction of the Bone Mass, a process called "Osteoporosis" . The table above shows foods and habits that can prevent calcium absorption. Oxalic, citric and phytic acids can bind to calcium in the intestine and form insoluble salts that cannot be assimilated. This happens if the bran is added to a food (usually refined) as a food supplement, while whole grains (especially rice) have a beneficial regulatory effect in the assimilation of minerals.
