Pineapple: 3 special exotic recipes



You love it or hate it, often in combination with coconut, pineapple is a versatile fruit with excellent properties. From the vast symbolism, the pineapple is especially linked to hospitality : it is often found overseas represented in bas-reliefs and decorative objects at the entrance of the houses to wish the guests a welcome .

The pineapple, or pineapple, should be consumed carefully, possibly not on an empty stomach and properly, without exaggerating, otherwise it can be annoying.

Fresh on the palate, succulent and tasty, as well as ideal for moisturizing and fighting cellulite and water retention, it is often found as a particular ingredient in recipes with an oriental flavor and ethnic cuisine: it lends itself in fact as an alternative ingredient in exotic and special recipes, which will transform a normal dinner in something original and tasty on the palate.

Here are the proposals : skewers of pineapple and tofu; basmati with pineapple, curry and cashew nuts; pineapple with oriental rice cream .

1. Skewers of tofu and pineapple

Ingredients for 2 people :

> a packet of tofu of about 200 grams,

> half a pineapple,

> a red or yellow pepper,

> soy sauce,

> sesame seeds,

> extra virgin olive oil,

> freshly ground black pepper.

Preparation : cut the tofu into squares or rectangles, the pineapple to the same extent and the peppers; then insert the pineapple, tofu and pepper into the toothpick alternately.

Heat a non-stick pan-grill (you can also do it on the grill), put a drizzle of oil on it, then cook the skewers on a medium heat for about ten minutes, turning them on each side and seasoning with a brush (you can also use a sprig of rosemary ) with an emulsion of oil and soy sauce; only towards the end add the sesame and fresh pepper. Serve warm.

2. Whole-grain basmati with pineapples and oriental cashews

Ingredients for 2 people :

> 5 handfuls of whole basmati rice,

> a spring onion,

> a handful of cashews,

> half a pineapple,

> caraway seeds,

> a teaspoon of curry powder,

> whole sea salt,

> extra virgin olive oil.

Preparation : boil the brown rice for the indicated time, together with 4 or 5 seeds of cumin and a little whole sea salt. Meanwhile, sauté a spring onion with a little oil in a non-stick pan, add the curry powder, then the cashews and fresh pineapple cut into small cubes; add the rice and cook for a few minutes. If necessary at the end add a little raw oil and pepper or pepper to taste.

Variations : this oriental, Thai and Chinese recipe is often served with chicken or shrimp, for a non-veg version. If you prefer, you can leave the white basmati, perhaps put in a mold and then turned upside down, serving the sauce to the side.

3. Pineapple with oriental spiced rice cream

Ingredients for 4 people :

> a fresh pineapple,

> 1 liter of milk (if you prefer rice vegetable),

> 150 grams of rice flour,

> 50 gr of whole cane sugar (or rice malt or agave or maple syrup),

> 20 grams of sultanas,

> 20 grams of finely chopped almonds,

> a cinnamon stick,

> a couple of cloves.

Preparation : boil the milk with the cloves and a piece of cinnamon; then turn off the heat and filter everything.

Put the milk with the sugar (or malt or syrup) and the rice flour back on the heat; work well with a whisk, add a small handful of ground almonds and a handful of raisins previously soaked in water for 20 minutes; cook by simmering the cream for about a quarter of an hour, then let it cool for about an hour in the fridge before serving, placing it next to fresh pineapple slices.
