Raw food tart: good and healthy. Why raw food ?
According to supporters of raw food eating raw allows you to assimilate all nutrients naturally present in food.

You can therefore introduce raw recipes even occasionally in your food routine, both to lighten too rich and tiring food loads for the stomach and intestines, and for simple curiosity.
Raw does not mean tasteless, on the contrary, it allows you to regain possession of your palate and rediscover flavors that are often sweetened and hidden by excipients that have little to do with the original food.
Raw food tart: the base
How can you make a raw tart ? The pastry, which needs butter and eggs and sugar, is replaced by what ? Simple: from the seeds, which naturally have an intake of fats and oils without the need to be processed or cooked, and from dried fruit .
Ingredients :
> 200 g of almonds, or other oil seeds, such as walnuts, hazelnuts, cashews
> 100 g of dates or date pasta
> aroma: half vanilla stick, or cinnamon powder, ginger powder.
Depending on the ingredient chosen or the mix of ingredients chosen, the degree of oiliness present in the mixture will vary . The result will have to be creamy but homogeneous, enough to allow a compact malleable paste to form.
The flavor given by the aromas is at the discretion of the personal palate: the classic is given by the vanilla baccha, while if you want something warmer you can opt for cinnamon, and finally the ginger adds a spicy taste that goes well with the citrus fillings.
Preparation : put all the ingredients dry in the mixer and blend at maximum speed until the consistency becomes that of an oily paste.
Raw food tart: 3 recipes
Once the base is prepared, it is spread in a cake mold or plum cake mold, for a height of about 1 cm or 2 cm, depending on the quantity obtained. Press well to prevent it from coming apart and let it rest in the fridge.
Meanwhile, the filling is prepared.
Raw chocolate and pear tart
The chocolate and raw food pear tart is easy to prepare and delicious to taste.
Ingredients for filling :
> 1 ripe avocado or 1 banana
> 150 g of coconut milk
> 2 tablespoons of raw cocoa powder
> 1 teaspoon of agave syrup
> 2 dates to adjust the creaminess
> 2 Kaiser pears.
Preparation: cut the pears and cubes or strips and set aside. Cocoa is dissolved in coconut milk, agave syrup is added and mixed until everything is blended. Then put all the ingredients in a mixer, with the avocado or banana coarsely cut and blended. Eventually dates are added to give the creamy consistency that you prefer. It must not be too liquid, otherwise it will melt.
Mix the pear cubes with the dough, or spread the chocolate cream, on the pastry previously prepared and left to rest in the fridge for at least two hours. Put it back in the fridge, garnish with pears in strips (if they were not added to cubes first), another hour in the fridge and it is ready to eat fresh!
Raw fruit and cream tart
Ingredients for the cream :
> 300 grams of cashew nuts soaked in water for two hours
> 100 g of coconut milk
> 2 tablespoons of agave syrup
> 2 tablespoons of soy or chia lecithin.
Preparation : the cream is obtained by blending everything until it reaches the preferred creaminess. The cream is spread on the tart base made to rest in the fridge . It is left in the fridge for about an hour and then garnished with the favorite seasonal fruit cut into thin slices. When the garnish is left to set in the fridge for another hour and is served fresh.
Raw cheesecake
The basic recipe is always the same.
Ingredients for the cream :
> 300 g of soaked cashews
> 4 tablespoons of agave syrup
> 200 g of strawberries
> 60 g of water;
> 1 pinch of salt
> 100 g of melted coconut oil.
Preparation : we insert all the ingredients in the blender, with the exception of coconut oil. We whisk until a lump-free cream is obtained. Then add the coconut oil and mix well at minimum speed.
We pour on the base and leave in the fridge for 8 hours. The cheesecake is easily disassembled with heat, so it is recommended to consume it fresh. You can garnish the surface with slices of fresh or raw strawberries or berries.
