Ingredients :

Preparation : mix all the ingredients used for the dough together, then knead with the hands on the pastry board for 5 minutes, until the dough is elastic. Then form a ball which you will let rest in the refrigerator for at least half an hour.

Meanwhile prepare the filling, cutting the pears and apples with the peel into very thin slices, then place the raisins (drained and previously soaked in warm water for 20 minutes), half a teaspoon of cinnamon, the juice of half a lemon, a tablespoon of maple syrup, the dismembered walnut kernels and a couple of cloves which you will then go to remove. Mix well and let it all flavor.

Then spread the dough in a very thin veil on lightly floured baking paper, giving it the shape of a rectangle; put the spoonful of maple syrup, spreading it over the entire surface with the help of a brush. Then put a light layer of breadcrumbs, then the fruit mixture, taking care to drain it from the excess liquids and removing the two cloves. Begin to roll up from left to right, leaving a couple of centimeters of margins at the top and bottom to then seal.

Then place your strudel with the "open" part underneath and cut it with a knife making diagonal lines. moisten the surface by brushing with a little maple syrup diluted in a tablespoon of warm water; Bake for about half an hour at about 170 ° C, preferably in a ventilated oven. Ingredients :

> 300g of steamed or baked pumpkin flesh;

> 50g almond flour;

> 60g whole wheat flour;

> 80g of dried figs,

> 20g of bitter cocoa,

> 30g maple syrup,

> a pinch of salt,

> half a teaspoon of cream of tartar,

> vegetable milk to taste,

> 50 grams of dark chocolate.

Preparation : put the pumpkin pulp in a mixer, add the dried figs, the syrup and whisk well. In another bowl add the sifted flour with the baking powder, the pinch of salt and the cocoa; mix and then add the previously blended wet part.

Mixing everything together, add as much milk as you can to obtain a soft but not liquid mixture; then add the dark chocolate cut into small flakes.
