The different different categories of foods, to be digested, require different conditions and enzymes. Therefore, a wrong way of eating, which requires the intervention of enzymes and digestive juices of very different quality, can often cause numerous disorders, such as acidity, intestinal fermentation, swelling, difficult digestion, constipation, dysentery and various forms of allergy and of headache .
In principle, if there are no particular digestive problems, at the same meal one can combine foods considered incompatible, provided they are in very limited quantities.
For those who have digestive difficulties, however, it is advisable to observe the rules on the dissociated diet, at least for a few weeks, in order to identify the combinations of foods that create major problems.
To get an idea of the ideal diet, we take into consideration the composition of the dishes that are usually present on our table such as, for example, pasta, legumes, meat, fish, cereals, eggs, dairy products.
The cereal-pulses association
Cereals with the addition of small amounts of protein have been, and still are, the basis of nutrition in the poorest countries, and provide all the essential proteins for the health of the organism.
The cereal and legume dishes are easily assimilated, on condition that the legumes are well cooked and that the ratio between the quantity of cereals and that of legumes is three to one .
Furthermore, a diet based predominantly on cereals, accompanied by small quantities of legumes, is not fattening, since cereals feed without supplying high quantities of calories.
Examples and recipes of the dissociated diet
Meat and fish consumption
To make vegetable proteins more assimilable, a small amount of animal protein is sufficient, no more than 30 g per day .
The combination of vegetable-cereal proteins with a small amount of animal protein is better, from the point of view of food balance, than the intake of only vegetable proteins or only animal proteins.
It is not necessary to consume large amounts of animal protein to ensure adequate growth of the organism.
Raw vegetables at every meal
Raw vegetables must be present in every meal to ensure the supply of vitamins and mineral salts, and to supply the water necessary for the digestion of both cereals and proteins.
The fruit between meals
The fruit should be consumed alone. The custom of consuming fruit at the end of a meal is one of the most frequent causes of intestinal fermentation .
