Oats on the market, as found
In organic shops or at the supermarket oats are available in various formats: from flakes, to grains, through oat flour, both wholegrain and refined, and oat bran .
Being a food rich in nutrients and beneficial to the body, oats also end up in ready-to-use products for breakfast - as in the case of instant oatmeal or the product " Awakening Buddha " -, or in partially cooked soups and cereal mixes and baby food.
Flour and oat flakes are often found as ingredients of a special, tasty and wholemeal bread, biscuits, crackers and other baked goods.
Dehulled oat grains are among the least industrially processed products, therefore the best from a nutritional point of view.
Here to follow we propose 3 recipes based on oats and each of the derivatives listed above, to have fun and experiment with taste and health.
Warm oat salad and artichoke hearts
Ingredients for 2 people
> 150 g of dehulled oat grains;
> a pair of tender artichoke hearts;
> a leek;
> a handful of pine nuts;
> fresh thyme;
> lemon juice;
> Parmesan cheese seasoned in flakes;
> extra virgin olive oil;
> salt and freshly ground black pepper.
Preparation
After soaking the oats in cold water for about 3 hours, drain and cook in a pot of boiling water for about 35-40 minutes, depending on your preference.
Meanwhile, in a large non-stick pan, sauté the leek cut into thin slices and the pine nuts in a couple of tablespoons of olive oil, then add a few leaves of fresh thyme, salt and pepper; cook, covering and adding a little water if necessary.
Meanwhile, slice the artichoke hearts very thinly and place them in a bowl, seasoned with a tablespoon of oil, fresh lemon juice, salt and pepper.
Then add the well-drained oats to the leeks and sauté for a couple of minutes . Allow to cool, add to the raw artichokes and mix well.
Serve in each dish by adding a few cold parmesan flakes over the salad.
Oatmeal roll
Ingredients
> 250 g of wholemeal oatmeal;
> 200 g of type 1 or 0 flour;
> 50 g of oat flakes;
> a teaspoon of honey;
> 250 ml of water;
> 30 g of dehydrated mother yeast;
> salt up to taste;
> extra virgin olive oil.
prepazione
Heat a little water in a stove and add the oat flakes and a little olive oil. Turn off and mix well, leaving the ingredients to soak for another 5 minutes .
Add the remaining cold water (the water temperature should not exceed 35-40 ° C), honey and baking powder, mix again with a wooden spoon .
Then pour in the flours and two pinches of salt and continue to mix the mixture for at least 5 minutes.
Let rise covered in a bowl for at least 3 hours, then resume the dough, rework it by folding and crushing it with your hands until it forms a stick or loaf of bread rather long.
Cover for another 2 hours, then make diagonal cuts on the surface with a knife and bake for at least 20 minutes in a hot oven at 200-250 ° C.
Pile of oats
Ingredients for 4-5 piade
> 200 g of oat flour;
> 50 g of flour 0;
> 170 ml of water;
> whole sea salt;
> extra virgin olive oil.
Preparation
Add the flour and knead well together, adding a tablespoon of oil, a pinch of salt and the necessary water. The dough should be homogeneous and soft.
Form a ball and let it rest for about 10 minutes at room temperature, covered with a cloth.
Then obtain 4-5 smaller balls that you will be thinly spreading with the rolling pin, then cooking on a hot non-stick plate, 2 or 3 minutes on each side.
They eat well hot enriched with favorite dishes and seasonal .
