1. Risotto with artichokes

2. Artichoke omelette
The artichoke omelette is one of the simplest and most effective recipes with artichokes.
Ingredients for 4 people
> 5/6 artichokes with thorns,
> 4 eggs,
> grated parmesan,
> little milk,
> breadcrumbs,
> salt and pepper.
Preparation: wash and clean very well and cut the artichokes and the inner and tender part of the stems into pieces. Pass them to the blender, they must be tiny tiny pieces without any hard parts. Mix the chopped artichokes with all the other ingredients. In a large non-stick pan put a generous tablespoon of oil and pour the mixture.
Let the omelette go covered for about ten minutes, keeping the flame low. Turn the omelette over and do the same thing on the other side. The simplest and best recipe with artichokes is ready to serve, perhaps accompanied by a salad of white cabbage.

3. Pan-fried artichokes and potatoes
Here is one of the healthiest recipes based on artichokes and potatoes, then iron and potassium.
Ingredients for 4 people:
> 4 artichokes, Romans or with thorns,
> 4 medium potatoes,
> a garlic clove,
> oregano,
> olive oil,
> pecorino,
> lemon.
Preparation : once cleaned properly, cut the artichokes into small wedges and leave them to soak in water and lemon, so as not to darken them. Do the same with the potatoes: remove the peel and cut them into wedges of the same size as the artichokes and let them boil in a large saucepan for five minutes.
Brown the crushed garlic in a pan with a little oil, add the drained potatoes and artichokes, oregano and salt and sauté together for a few minutes. Cover everything and let go a few more minutes, until they are cooked, adding water if necessary. Serve hot sprinkled with fresh grated pecorino and black pepper.
